1 tablespoon buttermilk
1 cup heavy cream
Over medium-low heat in a small saucepan warm the buttermilk and heavy cream to no more than 85ºF. Pour the mixture into a jar with a loose-fitting lid and let stand at room temperature.
Give the jar a good shake every 8 hours until you taste a slightly nutty flavor. This will take 24 to 36 hours depending on how warm the room is.
Tighten the lid on the jar and refrigerate for 24 hours before using.
Refrigerate up to two weeks.
